THIS CONCENTRATION KETTLE, FOR PROFESSIONAL USE ONLY, IS DESIGNED AND BUILT FOR VACUUM COOKING. THANKS TO A LIQUID RING PUMP SYSTEM, IT CREATES A VACUUM INSIDE THE MACHINE THAT ALLOWS TO WORK AT LOW TEMPERATURES (50°-70° C) WITH A SIGNIFICANT ENERGY SAVINS AND REDUCED PROCESSING TIME. OPERATING AT THESE LOW TEMPERATURES ENSURES ALSO A PROPER GENTLE TREATMENT OF THE PRODUCT, PRESERVING ITS ORGANOLEPTIC PROPERTIES. THE CONCENTRATION KETTLE IS PARTICULARLY SUITABLE FOR THE PRODUCTION OF JAMS, MARMALADES, SAUCES, TOMATO CONCENTRATES, DRESSINGS AND CREAMS.
